Hornblower Cruises and Events is currently seeking a Sous Chef for our Marina del Rey port. This position reports to the Executive Chef.  The Sous Chef is responsible for maximizing crew productivity and minimizing costs and wages.  You will work closely with the Executive Chef in coordinating and executing scheduled Menu Changes and establishing presentation, technique and quality standards throughout the year.

Events consist of primarily banquets with a wide range of menus from festive casual to California classic. Successful candidates will have attention to detail in a fast paced environment.  

Applicants are subject to background check and pre-employment/random drug testing per USCG regulations.

 Position specific responsibilities:

  • Ordering of product ensuring quality and competitive pricing.

  • Hiring, disciplining, scheduling and management of team of 10-15 Cooks.

  • Maintain Health Standards and ensure operation remains in full compliance with Health Department and other relevant regulatory agencies.

  • Assist Executive Chef in creating, costing and maintaining menus as needed.

  • Attend weekly catering meetings and work with Sales team to ensure success of events.

  • Work on board 3-4 events per week depending on business.

  • Work closely with Front of House team.

  • Assist Executive Chef in Newport Beach or Long Beach on occasion.

     

Desired background:

  • At least 5 years kitchen experience which includes prep work, line cooking and knowledge of health and sanitation codes

  • California Food handler’s card required within 30 days of employment

  • Valid Driver license

  • 21+ years old

  • Previous Kitchen Management experience a plus but not required.  Attitude and skill level much more important

  • Team first attitude

  • Ability to move about a boat or other limited space and to travel up and down stairs and do light to moderate lifting up to 50 pounds

  • Ability to operate a computer, including but not limited to Microsoft Office including Word and Excel
