Prep Cook - Rochester Brew House

To prepare batched food items used in all areas of operation.  Items include preparation of raw ingredients (washing, slicing and dicing) as well as putting ingredients together to make soups, stocks, sauces and batch recipes. 


Prep cook is responsible for maintaining cleanliness and sanitation standards for glassware, tableware, cooking utensils, etc., using machine and manual cleaning methods. 



  • Maintains proper food handling and safety procedures for all products used
  • Learn and be familiar with recipes and par levels
  • Determine preparation needs and write lists, prioritizing time and most critical needs
  • Know product handling guidelines including proper sanitation, storage, temperature and rotation of all food items
  • Properly produce all food items according to current recipes and specifications (including use of all equipment)
  • Maintain organization of prep area, dry storage and walk in areas
  • Perform opening/closing and on shift side work and maintenance properly
  • Verify, sign in and check quality of all deliveries
  • Keeps kitchen clean and organized
  • Maintain all appliances clean
  • Responsible for safe defrosting method for food needed the following day
  • Maintain working area safe and clean; sweep/mop as needed
  • Maintain kitchen floors clean and dry ensuring timely wipe up and clean-up of any spills

  • Exposure to knives and sharp objects
  • Exposure to open flames and hot surfaces

  • Standing for long periods of time on concrete floors
  • Frequent bending and lifting weight up to sixty pounds
  • Fast paced physical environment
  • Climbing stairs on an occasional basis
  • Lift and empty trashcans weighing up to 150 lbs., with assistance up to two times per shift. 
  • Frequent bending, stooping, reaching and lifting
  • Hazards include, but are not limited to, cuts, burns, slipping and tripping
